I imagine that it is something to do with UVW sets, perhaps i have used more than one by accident and it's only showing one of them. Will figure this out tomorrow when in uni.
I managed to fix my problem. Turns it out that it was the UVW Sets, i had too many on the meshes so it confused UDK, deleting them solved it.
I am going to texture all of the models with photo bases at first (mostly from CGtextures.com) so that we can quickly get a good impression of how everything will look in the end. And then i shall go back in and refine all of the textures, i would like to play around with combining painterly textures with realistic normal maps, this is one thing i will test during the texture refinement.
Initial texturing for one of the wooden crates and the wicker basket + lid. These have been unwrapped on the same maps as the market stalls to help fill up the blank space. The stalls will be posted here when they have all been textured.
